Using one tray allows you to slide your bait to either side so you still have acces to ice and larger baits in the bottom of the cooler.

If you would rather have the tray remain in contact with the ice as it melts, simply turn the BT72 90 degrees and it will drop all the way to the bottom of your cooler.
